★ ★ ★ ★ ★ Nothing beats a local butcher when you're not sure how to choose. This was the second time I bought from him. He was very friendly and helpful and recommended some pork belly. It looked very fresh but of course the proof is in the pudding.
I followed a sous vide recipe I found online and grilled to produce the yummy crackling while keeping the meat moist. Devoured by my Christmas party. Definitely my go to store for anything porky.
