The key ingredient used to replace egg whites is the use of ?????? ??????? to replace the egg whites. The logic is simple coz egg white is the main source of protein that provides the key structure for a macaron. But it is hard to find potato protein in the market, not even at our Phoon Huat but perhaps can use other types of potato protein to do it. It is very nice of the studio to actually sell to us, the students in small batches as they got their supply from overseas. Thanks so much to the wonderful Chef Kenny at there who is so willing to share his knowledge on both vegan n non vegan bakes, doing ganache etc! Two types of fillings: 1. Cocoa dusted vegan macarons w coffee ganache 2. Pinky coloured vegan macarons w Rose Buttercream & Raspberry jam (centred) All fillings r made fr scratch! #veganmacarons
