He fries each plate individually so that there is sufficient heat to generate the smokiness of wok hey. With ckt, it is all about timing too. Adding the egg after the noodle medley has absorbed the aromatics and is slick and separate with just a light coat of fragrant oil. Then incorporating all the other ingredients with deft movements into mouthfuls of sheer pleasure. Worth every calorie .
