Though the jerky or bak kwa is priced much higher than it's competitors just a few hundred metres away, there are many who would only purchase theirs. And understandably so - each slice is well barbecued but not overdone so that it is still easily chewable . For some other brands, the jerky is very hard and tough perhaps due to over caramelization. Some others do bacon bakwa so they developed a hybrid - bacon and pork which has a crunchier finish and probably even more calories per bite. Obviously much R & D has gone to bring bakwa into different foods, even ice cream! And they have also diversified into other products such as char siew. My take is that if one wants to be sinful and eat something that is not good for you - sugar and fatty pork - but tastes so good , the best bakwa out there - balanced , not too sweet , not too fatty , that is the best option.
