β β β β β Only serve 8-course Dinner tasting menu at night. About $450 a person. With half bottle of red wine. And a glass of Pot. The portion of food Is what you see from those pictures.
The appetiser, earth, wind, water and fire; You can strongly feel that the taste of the food has been teasing and stimulating your taste buds in sequence. The chef likes to cook food in a smoky way, and even the simple butter is full of rich smoky flavour. It is hard to say that this is a great flavour but a feast of vision and food. Pleasing to your eye and satisfying to your heart. Last but not least the service is well expectedly good.

β β β β β One of the best meals I've had in a very long time. We love the smokiness it had in a lot of the dishes which was unique and delicious. Each course was well-thought of and well executed with precision. Staff were friendly and attentive and the flow of the courses was perfect, never a pause between courses. Oxtail rice with truffle was the stand out. Definitely worth the Michelin star.

β β β β β Absolutely abysmal. Visited Pincho Bar (by Aitor) for my partner's birthday on 29th March 2022. No cocktail service at all. Their excuse - get this - our bartender resigned. Still did not explain the food quality.
In the exact order of photos, the quality likewise worsened. Best dish was the sausage. Worst was the $58(!) Sukalki stew. It had all of 4 pieces of cold, untender beef chunks (dont even know what cut it is as the taste on the tongue was too depressing). The stew soup/gravy was also not warm. It was like a minced potato, carrot and pea soup, the kind that parents mashed and cooked for babies. Zero delight, total surprise. Tartare was generic average.
Nothing here was worth the cost honestly. If they served their famed Negroni, it could have saved the mood but I guess a whammy was on the menu instead. Not to mention there was no view of the Fullerton Bay at the Bar and service was mediocre. Should have went to Gaig or Txa and most definitely will in future.

β β β β β Located in the picturesque Fullerton Waterboat House, the opportunity for a special experience is unfortunately missed.
The restaurant is very well lit which means the view of MBS is overshadowed by a reflection of the patrons and furniture.
The night started with a staff member telling us our table was not yet ready at the time of our reservation. 30 minutes waiting in a room lacking atmosphere, became obviously intentional once we were invited to enter the restaurant. There were no patrons leaving the table and the restaurant was not fully booked. They made us wait for nothing other than to create the perception of demand.
Unfortunately nothing jumped out as exceptional from the set menu provided. Some of it was ok. Nothing terrible.
When we asked for salt to enjoy with the bread and olive oil, we were told the kitchen didn't have salt.
When we asked for plain butter (because the "smoked butter" tasted exactly like liquid smoke had been stirred into store-bought butter..) we were told there was no plain butter in the kitchen.
2 very simple requests responded to with 2 very obvious lies. Every kitchen has butter and salt.
And when the meat was served with salt on top as seen in the photo, it was "the icing on the cake" so to speak!
It was the first degustation menu experience we've had in Singapore that didn't leave us hungry.. however we did have 3 serves of bread each as part of the course, so that definitely helped.
Overall. Not the worst. Not the best. Will not make it to our list of recommendations.

β β β β β Went back to the restaurant for the SingleThread residency in July 2022. As always the service is excellent and the food is very thoughtful. Once again the lovely staff made the evening very enjoyable and the selection of wine and the food all added up to a wonderful evening. Valet parking available or the nearest carpark will be at One Fullerton.

β β β β β Unique experience for me & friend. The plating, creativity of the food and service are all top notch! No regrets having a birthday celebration here. Speechless on how amaze I am by each and every dish that is served. I will come back again for sure. Price is on the high side but if you want to have a new experience, try this out.
