The chilli is expertly done and ratio of that with vinegar in the noodles is spot on. Also, the minced meat and sliced meat are all very traditionally marinated. I ordered the mee gia (thin noodles) dry and it was very well cooked- al dente! When I went, the stall was run by one lone earnest young man! Support our hawker successors!! Hard work!! And respect, bro! Keep up the excellent work! The soup is EXCELLENT TOO!!! You can taste the pedigree in the dish :)
