The beef brisket & tendon itself was very good especially with his chili concoction. The noodle was also cooked to perfection. Topped up with char siew for $3. The latter was too lean though of good flavor.

Offers a very unique dish - fermented beancurd pork trotters (南乳猪手) along with poached and soy sauce chicken. Only managed to try the soy sauce chicken which was tender and very succulent, hope to try the rest of the other dishes again ? ?

The kampong chicken is very flavourful. The char siew literally melt in the mouth. Also ordered the braised trotter in fermented beancurd. Very traditional and love the taste. All 4 dishes for SGD18. Very tasty and super value for money.

Chicken Rice (SGD $4) @ Fragrant Soya Sauce Chicken. . With over 40 years experience serving across Hong Kong and Singapore, Chef Hawker Randy is well regarded for his braised dishes. . The fresh chicken has a delightful bouncy springy chew, the chicken meat being clean-tasting and sweet, the slippery skin being savoury salty herbal in flavour. . The rice is pretty normal, fluffy and soft, but the gravy lends an addictive grainy salty herbal savoury flavour. Also appreciate the crunchy fresh kai-lan / Chinese broccoli with its vegetal bitter sweet notes.

Chinatown Hawker Centre is undoubtedly my top best go to hawker centre even among the CBD Top Fives, including People's Park, Hong Lim, Amoy, and Maxwell, each loaded with plenty of Michelin recommended eats and local favourites. Here at Chinatown, asides being the largest Hawker Centre in Singapore, also the highest number of great Cantonese eats. This stall is one of it. Though located in the green zone, unfortunately when I drop by this row I will usually go for the Claypot Kitchen, or Weng Kiang Kee Porridge, or Fatty Ox noodles. All my favourites. I did made a mental check to try this stall someday, but thus far its been years. Today, at late lunch 2pm, Weng Kiang Kee and Fatty Ox long finished and closed, same with Claypot Kitchen that only does 1 hour of business. Hence alright let's try their Namyu Pig Trotter Noodles. Surprising affordable, at $4.50 quite a good value as I given a mid size, and a huge size chunk of Pig Trotter with my thin noodles drenched in sauce, and a soup. First off while the noodles are Hong Kong style thin noodles, done right chewy and springy, I found the Namyu sauce a bit too watery and fail to cling on well to coat the noodles. Here, the Cantonese Namyu flavour is light to let the sticky pig collogen taste shine through. Good pig fat fragrance and sticky collogen on both the pig trotter skin and tendons. Even the lean meat parts are tender and tasty. Both the soup and the chilli are chicken rice offering thus the soup doesn't pair well in my book. But the tangy chicken rice chilli does help to cut through the sticky jerlatness of pig trotter fat. Overall a nice plate of noodles.
