Huat Heng Fried Hokkien Noodle

Taste is pretty good. Quantity satisfactory. Using simple folded takeaway packs so no extra charge for takeaway.

A barely passable plate of hokkien noodles for me, despite the "Fired" in the signboard. My plate of noodles was not part of a big batch orders, it was only a two plates order, and yet, it had no wok hei, no body, no character. I needed the help of all the condiments - calamansi, chilli sauce and pork lard crisps to finish off my plate of noodles. I eat something else the next time I'm at this hawker centre.

Unlike most of the wet and drippy style of Hokkien Mee, when there's a lack of broth umami, the plate of watery noodles will be unpalatable. Here is the dry style, quite a safe bet. Surprisingly the broth had been absorbed nicely in the noodles and yet retained a nice al dente bite. Crispy pork lard generously given is nicely salted and taste great with no greasy feel, blends neatly with the noodles. Bit of sotong, pork belly, prawns, par boiled and halved provided more bite and chew. Star is the sambal, vinegary, aromatic and blends with the noodles very well. The only thing a bit lacking is the wok hei. If a little stronger wok hei this would be a five star Hokkien Mee deserving coming back again and again for more. But in my view already beat many well written places with long queues. This Hokkien mee at peak Sunday dinner actually has no queue.

It is fried hokkien mee but not to my liking. More towards the wet version and it doesnt have the wok hey smell and taste of prawn in the mee.

I don’t know why the reviews are bad.. I bought a plate, did not look like much. It tasted great so I am leaving a review. Was not too wet. And the chili lent a nice touch to the flavorful noodles.
