★ ★ ★ ★ ★ I have eaten 3 times at Nishiyama Ramen and decided to write a review after the last visit.
I gave the store due credit because it is being run by Japanese and I understand how Japanese took great pride in their craft.
However, after the third time, due to inconsistency during the first two visits, I am convinced that the tonkutsu fundemantelly lacks depth. The soup is not thick enough, lack collegan and not favourful enough.
During the first visit when they just opened, I was quite impressed with the tonkutsu. It was acceptable, not too thick but acceptable.
However, during the second visit the tonkutsu tasted bland and uninteresting.
During the last visit, I can confirmed the tonkutsu is not thick and flavorful enough. I am not sure why or what happened but the most likely explanation is they could have reduced the time to prepare the tonkutsu.
It is a shame because both the ramen and char siew are acceptable.
The other issue I have is the price, at 17.8 per bowl it is easily one of the most expensive non restaurant ramen shop around.
Given the disappointment in the tonkutsu I really cannot recommend the place.
Side note, I have tasted the shio ramen too and the mixture of shio soup and fried cabbage and bean sprout really makes a good combination. However, the soup is too salty.

★ ★ ★ ★ ★ One of my favourite ramen places in Singapore, if not the favourite.
All of the options are - at the bare minimum - good, but the standouts for me are the miso and shoyu ramen.
The miso ramen is thick and rich, and reminiscent of the kind of miso ramen I had in Hokkaido, while the shoyu has a powerful savoury umami-ness that I've not experienced with any other shoyu I've had in Singapore.
Aside from the broth, the noodles here are wonderfully springy, and I did not know how tasty and full of flavour bamboo shoots could be until I visited this store.
Please do support this store, they absolutely deserve it!

★ ★ ★ ★ ★ Love the shio ramen, very flavourful and got some smokiness taste due to the char grilled vegetables.
Noodles are perfectly cooked and chewy. The spicy miso ramen was a bit oily but broth tasted good.

★ ★ ★ ★ ★ Ordered the miso butter corn ramen. While the combination may seem strange, the melted butter transforms the whole bowl of noodles into a bowl of magical goodness.
Take a sip of the melted butter with some corn and the soup and you will find a very good heartwarming combination. The melted butter coated on noodles bring about an exotic taste that you would not normally find in ramen.
This bowl of ramen comes choked full of vegetables, which is also unusual for ramen in Singapore but I liked it.
Will be returning to try their black garlic oil ramen. Do note that they start collecting bowls back from 8+pm so come earlier to try their ramen.

★ ★ ★ ★ ★ Didn't mean to be so negative lately.. but the Sapporo Gyokai Noko Tsukemen was super disappointing. For someone who can take salty foods.. this was unacceptably salty. Even after dunking the entire ramen into the dipping soup it was still salty (we even tried to do a Japanese 'water rice' with the soup - it still didn't save it). Sanpotei is still the place for Tsukemen in Singapore ??. Gyoza was very average.

★ ★ ★ ★ ★ This shop is located in the Japanese food court in the basement of Great World City just opposite Meidi-ya, so it’s easy to miss, especially now that you have to check in at one end and then walk to the other to get there. However, if you’re in the mood for authentic Hokkaido ramen (and perhaps some gyoza from their sister shop next door, though full disclosure, the dumplings aren’t as good as the ramen), this is a great little place. We went for their miso, of course, since that’s the specialty of the region, and were not disappointed. It’s totally authentic and really brought back memories of Hokkaido. I’ve also tried some of their seasonal specials and liked them. You can see a black garlic special among the photos.
