Taiga Dining - 1 Cuscaden Rd

(Hosted) With an entrance that’s cheekily hidden in plain view as a painting, you know at once the new @taigadining is not your conventional sushi-ya. Helming it is Chef Taiga Kanekuni who hails from Japan’s Kōchi prefecture. He was most recently at Sushi Ayumu and Sushi Kou but began honing his Edomae style of sushi over 20 years ago in Niigata and Tokyo. Being fastidious about his ingredients, he has trusted only one source for his seafood in the past decade and secures the best of each season from there. For his Shari, he uses four kinds of rice and four kinds of vinegar from all over Japan. Since Chef Taiga worked in Italian restaurants at the early stage of his career, some influence from that cuisine appears in the first part of his Omakase menu (priced at $280++, $380++ and $480++). His birthplace of Kōchi is famous for scenic views bounded by mountains, so the design team had looked to it for inspiration when creating this culinary atelier. I thought the abstract interpretation of rock strata was bold and unique. To soften and add warmth to the space, the counter which can accommodate eleven guests, is made from one piece of light-coloured wood that feels very sensuous to the touch. Also on display were wood sculptures representing how man and nature are intertwined. We had the pleasure of dining with owner @shawnnnching and his two other guests. Really enjoyed the omakase lunch! The sushi was amazing, truffle dishes were great and good service as well, they were also able to prepare a vegetarian omakase for my mother. Can’t wait to be back!

One of the best Omakase that I have ever had in Singapore, so far. They are using premium ingredients flown directly from Japan. Loved all the dishes plated by Chef Taiga. Good recommendation of Sake. We tried the one flown from Chef Taiga's home town, Kochi. Cozy dining ambience and attentive staffs. One of the best dining experience for ending my 2021.

This place is the best place to having real japanese plates in Singapore. I haven’t experience like this. Highly recommend for everyone!

What a way to celebrate the end of the year. Ambience was just the perfect. Exclusive yet not uptight. Diners can enjoy an exemplary meal without feeling intimidated. Full course Omakase was flawless and credit to the service staff for this delightful sake recommendation. Lastly credit to Chef Taiga and the surprise VIP Chef appearance for an unforgettable evening.

Went to opening reception. Actually, they use high quality ingredients. From begining to end, it was great experience...very satisfied?✨(For pics, I forgot to take some. it is not all.)

Food was fresh, excellent. We were served by Chef Taiga who is entertaining and passionate. We felt comfortable at Taiga and planning to visit again for sure. My partner was being surprised on the dessert arrangement for his birthday celebration. Best dining experience in Singapore and absolutely a dining venue for any kind of gatherings.
