β β β β β Was having a staycation nearby and decided to eat here. Tried their tonkotsu ramen and gyoza set with rice.
Being a premium outlet and part of the Michelin guide, I was hoping for better food but was sorely disappointed. The ramen was okay at best. Noodles was standard, not memorable. The soup was a bit lackluster, missing that umami feel to it.
The gyoza set was the total disaster. Gyoza was lukewarm when it reached us (we came at 11am for brunch, opening time). It was not wrapped properly, the meat inside fell out quite easily on picking it up. The rice was worst that your coffeeshop chai fan store. It was unevenly cooked, some "crispy" and some mushy. I know it is not their specialty but I expected better standards for a 16 dollar set.
In conclusion, would not come back, would not recommend. Do not be deceived by the "premium" label and michelin guide.

β β β β β We have been used to going to the Hototogisu outlet at GWC. Decided to try this outlet today. Menu is slightly different from GWC. Prices are slightly higher and positions itself as more premium although I donβt see why thatβs the case. The noodles didnβt taste any better than the non premium outlets and in fact the menu was more limited in choices.

β β β β β Decent ramen here and while Iβve dined at the 100AM outlet multiple times, it was my first time eating at the Tanglin Mall outlet yesterday. I enjoyed the tonkotsu ramen - noodles were springy and the soup was rich without being too overpowering. My friends also enjoyed the spicy ramen and truffle ramen. However, the duck ramen was average so I might suggest passing on that!

β β β β β Having been one of the only two ramen shops to receive a Michelin star last year, Hototogisu Ramen prides itself on the rich quality of its broth and meat. Hailing from the city of ramen Tokyo, Japan, it was founded back in 2006 by Chef Atsushi Yamamoto.
Itβs newest outlet at Tanglin Mall, opened in Jan this year, boasts a more premium menu compared to its pre-existing establishments.
The Iberico Cha Shu Hamaguri Shoyu Truffle Ramen with egg ($22) is a true testament to his culinary skills. For starters, the salt-based broth comes rich with flavours of pork, clam and chicken. What sets the main apart from other ramen restaurants is the iberico cha shu, with a substantial amount of fat that melts in your mouth along with the smoky char on every slice. Though a slight complaint would be that the dish could do with more meat, but looking at the price and the execution, it is negligible. The dollop of truffle turns out to be more of a prop, adding ever so bit of umami to the dish. Nonetheless, as customary with Japanese ramen, a soft ramen egg and a touch of white leeks and celery rounds out the heartening meal.
Unfortunately, the sides are passable and fail to stand out compared to the mains. The Karaage ($7) comes with a mayonnaise dip which helps to alleviate the overwhelming oiliness on each piece of meat. Some compliments would be that the chicken chunks are tender and the thin batter doesnβt overwhelm the dish.

β β β β β Ordered mix trio meat combination. Delicious broth, pork balls awesome-crispy & moist. smoky Duck meat was a nice inclusion, just a little thinly sliced. S$25 after ++ at this priceβ¦a treat to self!

β β β β β Nice place, clean and tidy, friendly staff, unique broth selection (clams broth). The noodle is a bit different, good kinda different, itβs broth is nice. The pieces of meat is light fried and taste awesome too. Recommended!

β β β β β The Hamaguri clams soup has its well balanced flavor and not fishy. Even you donβt like seafoods will find it tasty. It is less salty than the original one. Noodles softness just right. Only unsure is the tasteless truffles paste, it might try to strike a balance to enhance the taste but it is almost unnoticeable.
