β β β β β Alright, so it's Nobu we talking about. we need to expect highest standard and consistency across all Nobu. so, i'm comparing Nobu Singapore to Nobu in Japan. that's the standard i'm talking about.
Nobu Singapore is certainly quite an experience but compare to Nobu that i visited in Japan, the service is not there yet, of course, you might say because of newly opened. but, it's Nobu standard we talking about, from day 1, it has to be perfect.
1. service - when it's not busy, we are getting the service and attention, however when the restaurant got busy, it took them 20 mins to give us the dessert menu.
2. foods - hits and misses. i am very disappointed with the Sashimi's presentation, i'm expecting more from Nobu and all the details should be addressed, if you looked at the pic of sashimi, it's quite a disappointment.
but we do love the rest of the dishes, the dessert is good and glad that we waited for the menu.
I am sure my next visit to Nobu Singapore, it will be comparable to the standard it delivers in Tokyo. looking forward!

β β β β β The signatures were good. Although the salmon new style sashimi was better than the yellowtail jalapeΓ±o. Black cod was also great. The rock shrimp tempura was normal but the mushroom in the dish was heavenly. The house special maki was decent nothing special. Massive thanks to the service staff who served our table for the cheesecake recommendation- was delicious. Sake was good as well.

Favorite dishes were definitely the Spinach Salad (that yuzu and truffle flavor!), Crab Leg Tempura (sauce was delicious), Toro Tartare (mmmmmmmm) and Seafood Ceviche (so fresh!)
I also especially enjoyed the Miso Black Cos (their Signature) and Homemade Mochi ??
Please do not get the Squid Pasta which looks, smells and tastes like zichar ?
Four stars because I expected more for the price point!

Service, quantity of food, vibes.. all was great.
Every dish is a masterpiece in taste, presentation, loved it all.. canβt wait to go again for more..

β β β β β Disappointed below my expectation given its price point and reputation as a Nobu and in a Four seasons. Let me take you on the journey.
Welcome. Carpark. Not fun to navigate and it smells funny but the elevator goes directly to Nobu at Level 3. Arriving at the 3rd floor, you are welcomed at the bar. There is one hostess to greet you who will advise the restaurant of your arrival and authorize you to go over. Then you will see the whole team on the other side/restaurant. Donβt go on a rainy day, as the 20M walk through the garden between the welcome / bar and restaurant is not covered. At peak hour, you may have to wait for this slightly disjointed process.
Ambiance. Enter the restaurant. It's warm and romantic. Then you hear the roar from the kitchen to welcome you. I guess it's a Nobu thing. Personally, not a fan of a loud welcome from the kitchen and service staff but not a deal breaker. Then you are seated. OMG. it's like an economy class in a plane, couples tables are βtightβ. I used my iphone to measure, it's about 60 cm apart from the other tables. Seats are so tight together, If you are seated inside you must politely excuse yourself from the neighboring table as it is highly likely you will bump the table or the guest on your exit.
Cuisine. In general, I just felt it was a bit off balance. I think conceptually it's good and solid but on execution it's off balance and I feel weighted to the wrong side. Two examples. Tuna Toro rice Cracker, I felt the cracker was overdone or stronger tasting as well as the sauce, so much so, I couldn't taste much of the tuna toro or it felt overpowered. The second example was the wagyu dumplings. The dumpling skin overpowered the wagyu. Personally, my expectation should lean towards the main ingredient, ie, Tuna and wagyu, not the opposite, which is what I felt. Generally, the food wasnβt bad, but it didn't wow me. The signature miso cod was severely disappointing and felt a little βoffβ to me. Not as I would have expected for a signature Nobu dish. I did love the dessert and the yellowtail Jalapeno. The rest was ok.
Service. They appear to have a large number of floor and kitchen staff and they do try hard but feel they lack a bit of the β6 star emotional quotient (EQ)β. I mean by this, they donβt seem to have that higher understanding or capability to read and engage a guest at the higher level of client expectations. They are prompt, somewhat engaging but lack the x factor charisma.
Overall, it's not a bad experience but falls short of what I expected on the renowned successful Nobu that is also in the Four Seasons Hotel. Further, given their price point, you can find some pretty solid alternatives. For me, I might go back but it wonβt be for a while. I do hope they improve and evolve with time to meet closer to what I believe is the expectation.
