★ ★ ★ ★ ★ Not sure what was the rush but the chefs were working on Turbo and one even apologized that the preparation of the sushi was slow and came late (which was really not slow at all and great customer service). U would think since they had counter seats, they would serve you sushiya style (one piece at a time) but they served everything at one go which i do not enjoy. Also as earlier in the review, chef was on turbo fire which really defeated the purpose of a counter.
Chose the $90++ set for 15 pieces which included appetizer, miso soup with asari clams and green tea ice cream. In all honesty, I would pay a bit more and head to other proper sushiya joints. Having said that, this is probably not a sushiya but kaiseki style restaurant style. I saw fellow customers having the bari chirashi. That could be a better option (cheaper) if u head there.
3 stars for good customer service and average sushi and experience.

★ ★ ★ ★ ★ While the sushi itself was really good (I lived in Japan before), there was a bitter surprise with the bill. While the lunch set (including desert) was $50 (good value!); the TWO extra pieces (negitoro and hotate) were priced $48 extra (check the picture of the bill). Acknowledging the location (Ritz) but paying $50 for a set and almost the same amount for two additional pieces?! It's a pity as this ruined a generally great experience..

★ ★ ★ ★ ★ Horrible frontline service with a racist undertone
Went there few times but was served with a rude staff with coupled with short answers with detestable hidden undertones. Usually, this is a move to chase you away if
1. You don't look Japanese.
2. You don't look White (Enough money to splurge)
and when the restaurant is close to full capacity. This is what I've noticed. I stayed at the Ritz-Carlton over the course of few months and had observed the restaurant whenever I walk past the passageway. I managed to get a seating once despite few rejection attempts. Low and behold, the same staff paid very little attention to my seat but particularly more so to guests who are #1 or #2. The master chef is Japanese and would speak only in Japanese. He obviously has special seating dedicated to people of specific racial profile and had preferential treatment talking them. Good luck on getting quality served nigiri or omakase if you are not one of the two. Price is horrendously overpriced for such low quality service and/or food served.
I've seen better environment who consistently serve better service in the streets than this faux restaurant in a upscale environment. It seems that they rented building within the Ritz Carlton and hence do not conform to proper hospitality. It's a pity that Ritz Carlton includes them. It has certainly influence my future plans to stay in the Ritz Carlton.

★ ★ ★ ★ ★ It’s a Wow to read all these reviews here… they serve the sashimi directly sent from Tsukiji wet market.
GMO edamame ? is Soramame… common way of cooking with sea salt. We can remove the salt a bit, adjust the saltiness when having. Each sushi needs to have a different portion of rice to balance the fish… fragrance of sushi vinegar depends on the Chef’s preference… it doesn’t mean the stronger is better… Even Sushi counters in Japan, which people here call as ‘Sushiya’, all the sushi would be served at once if you order certain sushi sets especially during the lunch time…
I suppose since there’re tons of non authentic or modified Japanese food and wrong info around, people are confused when they taste the real. Overall, this restaurant is one of the restaurant in Singapore that has been serving authentic Japanese food for more than a decade.

The fishes are fresh. The fish slice is not as thick as I expected compare to other places but they tasted great. Grilled fish is nice too. Soft and juicy.
The service is excellent with non-stop refilling of tea. I like green tea here as it has strong green smell.
Recommend for special occasion and as the shop is quite small, do make the reservation.

★ ★ ★ ★ ★ Edomae Sushi, was the invention of the old Edo(old name for Tokyo) Period due to the blooming Edo culture. Since the ingredient of the sushi consist mainly of the fish caught off the waters of Edo, such as tuna, bonito, halibut, sea eel and shell fish, hence the name Edomae was given to this style of sushi.

Head chef Mr Shiraishi Shinji has served the finest sushi and sashimi with pride for more than 12 years. They are one of the few authentic sushi and sashimi restaurant in Singapore where you can enjoy fishes from our freshest cargo straight from Tsukiji Market. I also recommend coming here to try their weekday lunch set (15 pcs including appetiser and desert), but best to come early to avoid the wait.. for chef Shiraishi and his team of sushi masters do get lots of orders within that few hours of lunchtime!

★ ★ ★ ★ ★ If you're traveling and staying at the Ritz or nearby, please take my advise and stay away from this restaurant. I have never in my life asked a chef to stop bringing me food, but that has just changed today. To save myself from potential food poisoning, I decided to cut the kaiseki I had ordered short and just paid and left.
By far without any exaggeration, mostly inedible. This has been the worst kaiseki I've ever experienced, and borderline insulting to charge as much as they do for as poor quality ingredients served.
To start, we were given no explanation of what we were served. Just bowls placed on the table and walked away. What I assume was a simmered appetizer comprised of off cuts and gizzards chopped into a gritty mess started the meal off poorly.
Second dish - usually one of my favorites was firefly squid. Entirely flavorless, the head had a sandy gritty texture to it. Poor preparation I assume.
Third: broad bean(?), I'm not sure what it was, thought it may be some GMO supersized edamame at first. Tasted quite salty, not too great texture.
Fourth: Sashimi, none of the fish aside from toro was fresh. Very awkward texturally. Shiso flower had no blooms, so seemed pointless to use as garnish.
Fifth: grilled squid. For some reason the squid still contained all of its guts, so I left the squid on the plate only eating one bite before being put off by the texture.
Sixth: wagyu(?), the thinnest wagyu tataki. Flavor was alright, but only just.
Seventh: tempura, I had eaten the head of a fish which tasted like the most bitter, gritty texture, almost as if it had eaten pebbles or something. I left half the fish on the plate. The only reason I've made it this far into the meal was because I was too embarrassed to say anything.
Eighth: sushi, after waiting 10 minutes we were finally served an awfully slimy set of Anago, toro, uni, etc. I ate only the toro and anago before becoming so disgusted I wanted to stop the meal.
After receiving the sushi, I immediately asked the waitress to just stop bringing the rest of the courses and pay and leave, for the sake of my health. We were charged the full price of the meal of $270 per person, plus drinks and 10% service, 7% tax. Disappointed even more now.
