β β β β β This is my favourite stall for Paofan! It was used to be at JEM kopitiam and when the kopitiam was closed months ago , I thought I lost them !
Now they are at West Gate Food Republic!
The soup is tasty and rice cooked to right texture. I will usually ordered 2 bowls of different types with additional bowl of rice to be added into the soup . The chilli sauce that goes with the soup is great too!

I've order scallops champion. The taste is nice. The scallop is fresh and tasty.
There can be improvement on the soup.

β β β β β Heard so much about their Pao Fan and decided to drop by to try it. Chef Wai's Poached Rice first outlet is opened at JEM in Feb 2021 and they already have 3 outlets in Singapore now.

The broth has a well rounded flavor with just the right amount of umami. For first timer, I would recommend to try their Emperor Mixed Seafood Pao Fan ($10.90) as it features Scallops, Prawns, Fried Fish, Prawn Paste Ball, etc. Decent size Prawns and Chunky Fried Fish. I personally love their Springy Prawn Paste Ball! I will come back just for a bowl of of the Prawn Paste Ball! I also like the idea that the Crispy Rice and Egg Floss are served separately.

By chance to speak to the Chef Wai and got to know that he is actually the Ex-chef from Paradise Group. No wonder there is certain standards from choice of ingredients, broth and the thoughts of serving the crispy rice separately.

β β β β β At $7.90 cheapest, they are so far the most expensive Pao Fan that I have tried but they make up for it for their generous ingredients as you probably won't see a thicker cut fried fish elsewhere .
Taste wise is rather inconsistent as I was very impressed with the broth previously but today seems to be a bit off on the lighter side. Overall still an enjoyable bowl though.

β β β β β there r few pao fan stalls in sg. this is a less traditional flavour, using stronger soup base n perhaps pork broth. good portions of seafood offered. crispy rice goes well too. a nice lightish meal, better than many boring food republic stalls.

β β β β β Don't be initmated by their pao fan orangey appearance broth as it is due to the rich prawn-based stock that give its glistening orange hue. Packed with strong umami and a sweet crustacean taste, is just so so comforting.
For every bowl of pao fan ordered, you get a separate bowl of crispy rice and deep-fried egg floss, instead of being mixed in. In my opinion, this was a genius move, so we can βcustomiseβ our pao fan as we wish. The crispy rice and deep-fried egg floss are addictively crunchy.
what I tried,
Emperor Mixed Seafood Pao Fan.
The best of all worlds, with prawns, prawn paste balls, scallops and fried fish all in one. Prawns are juicy with profound sweetness. Scallop are fresh and cook to a good springy texture! The fried fish added texture while soaking up the broth nicely. The highlight here apart from the broth is the house-made prawn paste ball! The prawn paste ball has a super bouncy texture and sweet taste.
USA Sliced Beef Short Ribs Pao Fan.
This Sliced Beef Short Ribs Pao Fan comes with 2 soup base selection either the Original Soup Base or Pickled Cabbage Soup Base. I opt for the orginal. The hearty heaping of tender slices beef is a matchmade in heaven when savour together with their orginal broth as the beef gives the broth that extra lift in flavour.
Signature Kolo Fan
I was blown away when I had my first mouthful of the Kolo Rice. Thereβs a nice touch of richness from the pork lard and a good balance of savoury from the sauce with each bite. The crispy rice and deep-fried egg floss added delightful texture.
Personally feel their unique standout from the rest is the USA Sliced Beef Short Ribs Pao Fan and Signature Kolo Fan and their secret weapon which is their chilli sauce that complement the dish for that one fiery pairing. And of the cause the most satisfying part of the meal is how the richness of the broth, with deep, robust flavours that brings the whole dish together. Nourishing, comforting and appetizing all in one.
